A recipe for Moroccan Spice Mix is a mixture of the following finely ground ingredients:

1 part ground nutmeg
1 part ground cumin
1 part ground coriander
1/2 part ground ginger
1/2 part cayenne pepper
1/2 part teaspoons cinnamon
1/2 part teaspoons turmeric

In Morroco it is known as Ras El Hanout translated as “head of the shop," implying that it's "the best (or top) of what the shop has to offer. Moroccan Spice Mix is mainly used in meat, poultry and fish dishes with the mixture rubbed into the flesh.
