Turkish couscous and spinach salad

Ingredients:

300g Couscous
2 Lebanese cucumbers, diced
3 medium tomatoes, diced
2 medium carrots, shredded
Hot chilli flakes
hand full of flat leaf parsley
Pomegranate syrup
Baby leaf spinach

Method:

  1. Soak couscous in boiling water for 10 minutes
  2. Add the diced cucumbers, tomatoes, and shredded carrots.
  3. Serve with baby leaf spinach and some extra pomegranate syrup on the side
  4. Add chilli flakes, salt and pepper on top
