Algerian Rice Salad

Rice salad with green peppers, pimentos and parsley garnish with egg

Algerian Rice Salad

Ingredients:

2 cups rice, cook and chilled
1 1/2 green pepper, chopped
50g pimentos, chopped
1/2 onion, chopped
salt and pepper to taste

Dressing:
1/4 cup vinegar
3/4 cup salad oil
1 tsp Dijon mustard
1 tsp chopped parsley
1 tsp chopped chives

Method:

  1. Mix all the ingredients salad together.
  2. Mix all the ingredients dressing together.
  3. Pour dressing over rice.
  4. Place in pan, press firmly then chill.
  5. Invert and serve on a plate.
  6. Garnish with hard boiled eggs, mushrooms or olives.
