Lebanese Grilled Chicken

Spicy chicken marinated in lemon, garlic, oregano and thyme

Lebanese Grilled Chicken

Ingredients:

6 Chicken Quarters Skin-On
1/2 Cup of Lemon Juice
1 Cup Red Vinegar
5 Cloves Garlic, crushed
3/4 Cup Olive Oil
Salt and pepper to taste
1 Tsp Ground Cinnamon
1 Tsp Ground Cumin
1 Tsp Dried Oregano Flakes
1 Tsp Dried Thyme Flakes

Method:

  1. Make a few cuts in chicken pieces for marinade to seep through.
  2. In a large bowl mix the lemon, vinegar, garlic, olive oil, herbs and spices then add the chicken pieces and coat well with the marinade.
  3. Cover bowl with cling wrap let then place in the fridge overnight to marinade or at least 4 hours.
  4. Grilling the chicken for about 45 minutes on a medium heat until crisp and dark golden ensure there is no blood near the bone.
  5. Serve chicken with tahini and pita bread.
